friday--after work--THE MINI VACAY STARTED! dad took me, rebekah, emily, and caleb to see transformers at the IMAX! then we had dinner at buffalo wild wings...
saturday--A. DAY. OFF. that in itself was a treat! i decided to make the most of it! i cleaned to my hearts content... then i'd get bored... i'd relax a while--watch tv, whatever... then i'd get up and start cleaning again...well, by the end of the day, i had cleaned every dish, stitch of clothes (washed, folded, AND put away!), washed all the sheets, scrubbed sinks/tubs/toilets, vacuumed, dusted, washed windows, cleaned out my car, blew off the garage/driveway/sidewalk, gathered nershi's toys, ....and i can't even REMEMBER the rest! (i cringed as i got in the kitchen today to COOK haha... i didn't want to get it dirty!)
lee got off of work, dad came over & i picked up a bojangles tailgate special... we watched tv... then i went to bed!
sunday--lee got up and went to the mountains with his dad... well, what on earth was i going to do today?! i had nothing to clean! :) hee hee... well, granny and i went to costco! i was able to do a little pantry re-stocking... and i replenished my freezer!
in the process, i was able to try some new recipes from friends for things that they like to make/freeze for quick homemade meals! i made a cuban black bean stew (this is one of my new favorites!)--and couldn't have been any easier to make! and i also made italian sausage stuffed shells!
now, the stuffed shells were messy, but were still fun to make and it made a LOT! (this was the first time i'd made the recipe...and since i was freezing it anyway, i'd decided to double it!!)...hey, if your gonna freeze meals and stock up, might as well make it worth your while!
in addition to the two new recipes i tried today, i also made some of my sauce (for lasagna) and opted to go ahead and use all of it in casseroles & not reserve any for spaghetti... (the stuff i'd reserved last time ended up being lasagna, too!)... i made 6 square lasagnas! yum!
...so, all in all...most of the stuff i bought today at costco/grocery store was used to make my dishes to freeze! i didn't want to stock up too much on just regular grocery stuff--my #1 eater is gone until tuesday night :) then we're off to kings dominion on wednesday (YAY!!!!)... after our week of "pantry creations" i've ended up with a few servings of porkchops and some of granny pat's brunswick stew left in the freezer (plus all the stuff i made today!)
...well, i guess that's about it for my mini vacation! its time for me to enjoy a few stuffed shells that wouldn't fit in one of my pans that i planned on freezing... a late dinner... then i'm off to bed! although my weekend wasn't very "patriotic", i did enjoy watching the fireworks on tv and i got a heck of a lot done around the house!
