one thing i'm loving about cooking at home is learning to make some of my favorite restaurant dishes...MY WAY!! you can control what goes in...whether you're trying to make it more nutritious, without things you're allergic to, or just with all of your favorites!
i always feel bad when i tell the waiter "can you leave the dressing on the side" or "can you add extra mushrooms" or...ok, i'll stop...because i could go on for DAYS!
tonite i made fajitas...i grilled up the last of my chicken tenderloins (guess its time for another costco run!)...added a small onion...a whole container of baby bella mushrooms...and zucchini!
yes, i love cooking with zucchini...and i know its not a normal "fajita" ingredient...but we don't care for most peppers...well, any peppers at all come to think of it! but i needed a pop of color!
after i added all that, i mixed in my fajita seasoning (packet) and a little water...then rounded up those yummy toppings!! low fat sour cream, beans, salsa, and a little cheese...with my whole wheat tortillas, of course!
wah-lah! dinner! it was tasty! lee's working late tonite...so hopefully he'll be good and hungry when he gets home! :)
i also forgot to mention last week...i had eggplant for the first time at a ducks unlimited banquet...YUMMMM! i'll be trying out eggplant here before too long...
at the banquet it was prepared breaded and baked with crab & shrimp on top...de-lish! i asked lee (very enthusiastically) "did you try that eggplant?? did you like it??" and he replied "eh, it was ok..." hmm...just wait till i get a hold of that purple squash! i think he'll have a different response! :)
so stay tuned for my eggplant adventures...i'm looking forward to it! i can't decide if i want to do an eggplant parmesan...or a lasagna using the eggplant as noodles...or what!? i'm cruising the web for interesting ideas! :)
