asian pork tenderloin

tonite i tried a new recipe...and i wasn't sure how it would work out...but i knew all the ingredients were yummy by themselves! :)

one pork tenderloin
1/2 jar hoisin sauce (no luck finding this at food lion...gotta go to lowe's or harris teeter for this one)
a few tbsp of soy sauce (low sodium for us!)
dash of ground ginger
dash of red pepper

left it in the crock pot while i was at work...and presto!

i actually wasn't a fan of this when i had first made it...but once i poured the sauce back over the meat...it turned out pretty good!

paired it up with some yummy rice and oven baked some asparagus with cherry tomatoes with olive oil, balsamic vinegar, fresh ground pepper...and a little salt!

i think next time, i'll add more of the hoisin and a little more soy sauce...it wasn't saucy enough for me (i like to have some "juice" for the rice!)

If you like spicy, try 1 jar of pepperocinis and 2 cans of beef broth and a little garlic with like 2-3 lbs of pork tenderloin (normally 2 tenderloins). Cook in crockpot on low for 7-8 hours. Awesome!!! Good with rice but really good then next day on multi-grain tortillas!
