so...i'm sure its been done before...but i made up a recipe tonite for dinner...and i must say it was very yummy!
imagine a lasagna...mexican style!
i used grilled chicken strips (lee uses these for his wraps), a can of rotel (or diced tomatoes would work, too), cheese and instead of lasagna noodles...TORTILLAS! oh, and i tried to finely chop some onions to "hide" them...but my very keen husband picked right up on it! and for a topping i crumbled up some tortilla chips with cheese for a little bit of a crunch! i served it with a "dollop" (i love that word) of sour cream on the side!
i started with a little rotel on the bottom so the tortillas wouldn't stick (thanks, aunt lisa!), then just layered till i ran out of chicken and tomatoes! put on the topping and baked it in the oven till it looked like it was heated together and the cheese was melted
i was very proud of lee for trying it...and liking it!! he seemed a little skeptical that i had "invented" a recipe...but he went back for seconds! woo hoo!
he had a very useful suggestion for the next one--black olives....but i'll put them on his half...i'm not a fan...but i will add black beans! yum!
i was pretty proud of myself! we've had a great night getting back into a normal routine...after traveling, snow, and crazy schedules last week...and of course groceries yesterday...its good to get back to normal!!
lee's gained control of the remote and jack bauer has invaded home base...i must report to my station!! :)
