after a long day from no sleep last night (with what i've self diagnosed as an isolated incedent of restless leg syndrome), i was willing to wary on my commitment to cook more tonite...especially since lee is working late
...but i stuck to it, and decided to cook...hmm...what's on the menu?
i found a recipe on kraft foods sometime ago where you make spaghetti noodles (or whatever kind you have) and once you drain them, you throw them back in the hot pot with some soy sauce/asian sauce (kraft recommends their asian peanut dressing...yum) and throw in whatever veggies/meat you choose and simmer until its warm throughout...oh, and i almost forgot, a dash of red pepper flakes (depending on if you like that sort of spice)...the idea is, when you throw the hot noodles back in the hot pot, they just absorb that sauce!
...basically, anything goes--just use the veggies/meat, sauces, and spice that your family likes!
this has been a hit at our house!! i've used everything from fetuccini to angel hair...and whatever kind of veggies on hand (canned or fresh)....this is a great recipe because i get to use whatever is on hand (especially if something is about to get pitched)...also, i'm not a fan of peppers--and most stir fry veggie mixes or recipes have LOTS of peppers in them--uck!
so tonite i used angel hair pasta, chicken, and frozen garden peas (i like how they pop in your mouth) :)
...just when you thought it couldn't get any better...LEFTOVERS!! the longer this stuff sits, the better it gets!
i guess if i had to say something bad about the recipe, it would be that you have to use more than one pot! so, that's it...just a little more clean up! but, it is a one dish meal--you don't really need any sides...just a nice bowl!
its on the stove for when lee gets home...i'll probably be asleep...and i think this will be the first time that's happened in a long time (me asleep before lee gets home...i REALLY try to wait up for him)
OH! and before i forget...the funniest thing happened to me this morning...as i'm closing the garage door to leave for work (late, i might add) the door gets about 1/2 way down and i see a little black cat run in the garage...making the garage door go back up (safety thing)
...i get out and he seems to welcome the attention he's getting while i'm trying my best to "shoo" him out of there...
(REPEAT THE PREVIOUS 2 PARAGRAPHS)...
he was just as sweet as he could be...he was all black with a little white spot on his chest...
finally, i get out of the car (with the remote)...go get the cat (pick him up)...hold him outside until the door FINALLY closes...hop back in the car for the cat to lay on his back with his paws stretched out in front of the garage door...as if to say "please let me in, look how adorable i am"
...sigh...i don't need another man in my house! i'm sure someone's looking for this little guy--he was so friendly and didn't seem to mind being picked up (he's got to be good with kids)
i can't help but wonder if this isn't the last time i'll see him...i've mentioned it to lee to keep an eye out to make sure he doesn't slip in! poor little guy...
