lately i've been in the mood for HOT stuff! hot sauce... peppers... wasabi... anything SPICY!
i had planned on a leftover re-incarnation for dinner... but started thinking about stuffed peppers... which led me to think about jalepeno poppers... and those two things, of course instigated a grocery trip...
tonite i decided to make up a recipe for jalepeno poppers... (you know me! i checked several recipes online to see the proportion of ingredients used--but then did something totally different!)
so--i used a block of cream cheese, salt & pepper, some adobo seasoning, some chili-lime seasoning, and i mixed in some mexican cheese blend (monterey jack, cheddar, ...i forget the rest)... mixed it together, then sprinkled cheese on top... "popped" them in the 425 degree oven for 15 mins... and
VOILA!
they. are. fabulous. ...so full of flavor w/ juuuuuust a little bit of heat :) you'd never know that when you combine those peppers and the cream cheese they'd taste like that out of the oven! it becomes a totally different animal! (and its not a DEEP FRIED animal!)

i know...i'm a little late to jump on the "jalepeno popper" bandwagon... but, oh well!
tomorrow i'm looking forward to trying out my stuffed peppers... my plan of attack is "sorta like a meatloaf stuffed in a pepper"
