KABOBS!! they're sooo good & couldn't be any easier! you get to pick your favorite veggies and cook 'em outside...how fun! (haha...above is my "before shot!")

tonite we tried some new veggies...and we learned from some that didn't turn out exactly like we wanted...
potatoes were new... i knew they'd take the longest, so i put them on first and took 'em off last...
and the mushrooms i did last time had GREAT flavor (they're my favorites)...but they were difficult to put on the skewer...so this time i got the whole baby bella mushrooms... and we cut the zucchini/squash a little thicker so you could skewer through the skins on the side instead of through the center of the "meat" of the squash...SUCCESS!
below are the potatoes & red onion with my SUPER EASY dip... its just sour cream with a spice mixture (i've used anything from mrs. dash to pampered chef seasonings to grill seasonings...) just mix to your liking (tip: the flavor will fuse with the sour cream if you make this ahead of time and stick it back in the fridge while you're cookin')
...these were good! its like a baked potato...from the grill!! :-D
above is the honey dijon vinaigrette chicken (LOVE that marinade!) and steak...
and last but not least...the zucchini... squash... and mushrooms! (these 3 guys alllllways go great together and are 3 of my favorites!)
....who's ready for DINNER! lee and i have joked (well...wondered) about being vegetarians... even though meat is good, we ALWAYS go back for more veggies... both of us! so, i make 2 plates of veggies and 1 plate of meat...now you may be wondering... we didn't eat all of this! jennifer came over to hang out with us and see her "boyfriend" nershi...
i decided that if i was ever on death row...this would be my "last meal!" ...what would be YOUR last meal!?
