rainy day and a busy week

today i'm resisting a nap with all of my strength...its the coldest rain i think i've ever felt and its been raining for over 24 hours straight (unless it took a break when i was asleep...)

with this messy winter-y weather, i decided to make some chili in my slow cooker...another first for me...i'm wondering how it will measure up to last night's home-run of a dinner? i found a few recipes online then tweaked all of them and did my own thing again! so far it smells de-lish...and of course, we'll have some cornbread to go along with it...

i LOVE good, homemade chili, but i've yet to make my own...we'll see how that goes :) it sure does look good in the crock pot! like a picture in a magazine!

i've also been wanting to make one of those marinated bean salads...you know, the one with green beans, kidney beans, garbanzo beans, corn, onion...with the oil, sugar, and vinegar...i'm not sure how lee will like this stuff, but i enjoy it--but we'll see if any of it goes to waste...i've had it at several family events...but never made it myself...it was very easy to fix and it just marinates in the fridge...doesn't get much more simple than that! hopefully it can be a nice side dish for dinner this week...

(apparently i've had beans on the brain...haha)

this week is going to be hectic...and i'm already looking forward to next monday...my week will be full of getting ready for the dixie deer classic with a dental check up thrown in the mix on tuesday...sigh...

its always busy the week before--getting the booth ready in raleigh, setting up the phone lines for the credit cards, getting the safes organized for the guys (the ones that don't sell the safes) to be able to check our inventory on stuff...i could go on...all of that in addition to how busy we've been at the store...

whew...all that talk about the week coming up has got me reconsidering my choice to not take a nap...

off to get some laundry started and rest for just a little while...hubby is working late tonite for a benefit...they'll stay open a little later and a certain amount of the store's proceeds benefit a specific group/charity (school booster clubs, etc)...i think that's how the benefit night works...??
