a healthy twist

in my pursuit of a healthier hannah...i'm attempting to make the good ole recipes BETTER (tasting and for you)...

tonite we had tacos!
instead of using--replaced it with
ground beef--ground chicken
lettuce--baby greens (i'm not sure what diff. this made...but the darker the greens the better for you, right?)
tortillas--whole wheat tortillas (can NOT tell the difference...i PROMISE!)
rice--whole wheat rice (i've got to get used to cooking this...i'm not sure if its just that different, or i under/over cooked it...)
fresh chopped cherry tomatoes (neither of us are tomato fans, but we can't seem to get enough of these little guys...so tiny with much more flavor and a different texture!)
and juuuuust a little bit of sour cream
with a little bit of cheese...

the verdict?
lee and i both agreed they were WAY better than the regular tacos...the chicken was very moist and flavorful...try it and let me know what you think! :)

mmm...file this under "keepers!"

hannah, this type of food is my forte!

use ground turkey as an alternative to ground beef or chicken. make your own taco seasoning with garlic salt, cumin, chili powder, adobo (it's a seasoning you buy in the mexican aisle of the grocery - put it on EVERYTHING and it's fantastic!) salt and pepper. make your own pico de gallo (salsa) with tomatoes, green pepper, purple onion, cilantro, red wine vinegar, salt and pepper. use light sour cream and grate your own cheese.

OH! and one other recipe that's really yummy using ground chicken, turkey or beef: meatloaf.

1 lb ground chicken, beef or turkey
1 egg
1 piece of bread, broken into small pieces
1 lipton dry onion mushroom soup mix

combine ingredients. shape into loaf in a baking dish. preheat oven to 350. bake for 45 minutes. combine 1/2 cup catsup and 3/4 cup of water. pour over loaf when finished cooking.

sorry sorry, but i thought of one more thing: homemade meatballs! i have the recipe at home but will send it tonight if i can remember.

ooh...love the meatloaf/meatball idea!

i can do that!! i love making my own pico...didn't have the stuff at the house last nite...

and yes! i LOVE adobo seasoning! yum!

I used ground turkey in my 5 bean chili. Chili powder, cumin, salt and pepper to taste, 1 lb ground turkey, 1 can kidney beans, 1 can pinto beans, 1 can northern beans, 1 can chili beans, and 1 can navy beans, 2-3 cans beef broth depending on your liking, 1 lg onion, 2 jalapenos and celery. I saute the vegetables the first in the bottom of the pan with a little olive oil cooking spray. Then I add the meat and brown it. Then add your spices and toss together. Then add beans and beef broth. Simmer for a long time... : )
