a keeper for sure!

tonite, i was in an unusual mood...i felt like trying something very out of the ordinary in the kitchen...maybe it was the rain, maybe it was the fact that if i had a total flop that my wonderful husband could pick up dinner...

so...exactly what was i going to do with my boring old chicken breast? (and not make it asian...my dear husband indulges my asian attraction)

ah! i can do something in the oven...but definitely not in the mood for boring chicken casserole...good...but not experimental...

so in the process of looking at a few recipes that put chicken in the oven with crushed ritz crackers, i combined about 3 recipes....

so here goes...

mix sour cream and ranch dressing to taste (leave it a little ranch-y...more flavor!)

then crush ritz crackers (unrecognizably crushed) mix with salt, pepper, and parmesan cheese

"dip" the chicken first in the ranch/sour cream mixture, then in the ritz cracker mixture (covered in each layer)
(i set up a line...first the sauce plate, then the cracker crumb stuff, then the casserole dish...)

line them up in a casserole dish and bake at 350 for about 20-30 mins (depends on the size of your breasts...ha!)

i pulled it out of the oven and let it cool for a few minutes....

...if you'll notice on the bottom left hand chicken i had my "dinner or disaster" bite...i do this from time to time! :) its my sacrifice for the family...(yes, sometimes it is that bad...haha)

WOW!! its fantastic...i know the ingredients sound a little weird but you've got to try it...for none other reason than its SOOOO easy...it took me about 10 minutes to dip/lay...and then i had 25 minutes for my side dishes...and taking the clean dishes out of the dishwasher and putting them in the cabinet...and loading it back up...

i can't wait to see what lee thinks--he gets home tonite around 9ish...and let me know if you try it, too!! it sort of reminded me of some chicken cordon bleu i've had somewhere...but with out the gooey cheese and the ham...(which i'm sure you could add in if you butterflied the chicken and rolled it up in there)

i'm usually not THIS impressed with my own experimental cooking...but this is a winner! enjoy! :)
